How does one change the default font for text? I keep getting Times Roman, which I don't wish to use. I'm unable to find this anywhere: maybe I'm not looking in the right place?

At this time, you cannot change the default font for an entire form. We do, however, intend to add this feature to one of our next releases!
A workaround is to create a form element with the correct font settings and copy and paste subsequent similar elements onto the grid (just changing the element's name).
